does anyone know if when they dig up stuff on you for the interview stages do they go over any medical records? like would they know every time someone was in the hospital, or do they just get a chart from your doctor

No, they don't!

They give you a form to sign, and it allows them to go through your medical file and examine everything in there. They will also look to get a letter of clearance from your current doctor. As well, they may have you see a doctor of their choice (or your own doctor) to make sure you are currently physically and mentally fit to be a police officer.
